Well, it's time to travel again with this Melbourne pasta making course!

Join me for the Pasta Journey signature three-week course: A Pasta Journey Through Italy.  

Over three weeks, you will discover the food from the birthplace of pasta, Italy. 

Course outline: 

Week One: Pasta 101 In this step-by-step class, you will learn to make two kinds of egg pasta typical to the Emilia-Romagna region, 'Paglia e fieno" tagliatelle, and garganelli. To accompany your pasta, I will show you how to cook a proper ragu' (know as Bolognese sauce).

Week Two: Tortellini & Tortelloni In week two, you will learn how to master stuffed pasta, and we will be making two different shapes of ravioli: tortellini & tortelloni. Following famous chef Massimo Bottura's recipe, we will prepare tortellini with a delicate meat filling. For this recipe, we stick to using ingredients from the Emilia-Romagna region, Parmigiano-Reggiano, Prosciutto di Parma, and fresh pork. We will also make tortelloni with one of the most decadent fillings: the simple and delicious combination of slowly roasted spinach and ricotta served with a brown butter and sage sauce.  

Week Three: Cavatelli, & Busiate: In the third week we will explore the Southern part of Italy. You will be guided through the step by step process of making pasta from scratch using only your hands! You'll learn how to roll and create Cavatelli from Puglia and Busiate from Sicily! You'll also get to make 2 delicious seasonal sauces to accompany your fresh pasta meal.

At the end of each class, you'll get to sit back, relax and enjoy the food you've prepared with like-minded people in my kitchen. During the class, the teacher will provide:

  • coffee and tea
  • good Italian wine to match the recipes
  • recipe's booklet
  • snacks and/or dessert

Don't worry - you'll make enough pasta so that you can take it home and share it with your family! At the end of the pasta course you will be gifted two packs of 00 flour and semolina flour from Italy, so that you can recreate the pasta yourself at home.
