Orecchiette are a pasta typical of Apulia, a region of Southern Italy. Their name comes from their shape, which resembles a small ear.

Each individual piece made by hand like the "nonne" grandmas of Bari. 


Cook in salted boiling water for 4-5 minutes.

Traditionally served with broccoli but equally delicious with a meat ragu -like slow cooked lamb ragu- which catches all the sauce.



You can store fresh orecchiette in the refrigerator for 2 to 3 days, or you can freeze and store it for a month in the freezer.

Don't defrost pasta before cooking; simply drop the frozen  pasta into boiling water and cook for 5-6 minutes.
