A single perfect extra-large ravioli, with an egg yolk, ricotta and roasted mushrooms.
Cook only briefly about 3 minutes, the yolk should stay wet and slowly ooze out of the cooked pasta at the first cut of the knife.
Serve it with a browned butter sauce and some roasted vegetables or with Bacon Butter Sauce.
HOW TO STORE:
You can store fresh egg yolk raviolo in the refrigerator for 2 days. Do not freeze.
